Cardamom, a sweetly aromatic spice from a tropical plant related to ginger, is one of the world’s most expensive spices after saffron and vanilla. Labor-intensive to grow, it’s primarily cultivated in India and Guatemala. The drying process determines the pod’s color: green from quick drying and white from sun-bleaching.
Widely used in Middle Eastern and Scandinavian cuisines, cardamom flavors coffee, baked goods, and chai. Whole pods, seeds, or powder are available, with whole pods retaining flavor the longest. Historically called the “Queen of Spices,” cardamom also serves in teas, tinctures, and as a fragrance in body care products.
