This organic chaga is wild collected from birch-rich forests in northern Canada, where the fungus naturally forms a dark, charcoal-like sclerotium on mature trees. The interior has a warm golden color and releases a smooth, earthy flavor when simmered. These dense pieces hold up well to long decoctions and can often be re-steeped.
Chaga has a long history of use across northern regions, where it was prepared as a deeply colored tea or added to broths for a grounding, woodsy character. Its mild, slightly vanilla-like notes pair well with cacao, spices, or other tonic herbs.
Simmer pieces in hot water for 20 to 30 minutes to create a dark, tea-like brew. stain and enjoy warm, or blend with herbs like ginger or cinnamon. Allow pieces to dry between uses to extend their life.
