Sort and rinse before cooking. Soak beans 8 hours or overnight. Drain and rinse. Add 5 cups water for every 1 cup beans. Liquid should cover beans by 1–2 inches. Bring to a boil; reduce heat and simmer until tender but firm, about 45 minutes to 2 hours. Check occasionally and add more water if needed. If using a pressure cooker, pressure cook 3–5 minutes.
