Fresh ground + fresh milled
Every whole spice is also sold ground, same price. Any grain, rice or bean can be milled into flour to order. One choice on the item, nothing else to know.
Why you will not find a shelf of flour here
Whole keeps. Ground fades.
A peppercorn holds its flavor for years. Ground pepper starts losing it the week it is ground. Flour is the same story: whole oats, rice and beans keep for ages, and the flour milled from them is at its best in the first few weeks.
So we stock the whole thing and grind to order. You get it fresher than anything that sat pre-milled in a bag, we buy just what we need, and nothing goes stale on a shelf.
How it works
Three steps, one choice
-
Pick the whole item
Peppercorns instead of ground pepper. Cumin seed instead of ground cumin. Rolled oats, white rice or chickpeas instead of flour.
-
Choose Ground, or tick Mill into flour
Spices have a Whole | Ground switch. Grains, rice and beans have a Mill into flour box. Both sit above the quantity on the item page and on every card in the shop grid, and you can change your mind in the basket.
-
We grind as we pack
Your order is flagged for the packer. Ground spice comes from the pre-ground jar when we have one, otherwise it is ground as we pack. Flour is always milled as we pack.
Where to find it
Everything you can have ground or milled, by aisle
The counts are live, so what you see here is what we can grind today.
Gluten-free flour
Build your own blend
Pick the grains and beans you want, set how much of each, and we mill them together into one flour. The price you see is the grain plus milling, and the item line in your basket shows the same. Or untick “together” and get each flour in its own bag. Every item here is milled in our gluten-free mill.
New to blending? Rice flour is the usual base for gluten-free baking. Sorghum and oat soften the texture, and a little chickpea adds protein and structure. For lighter cakes and breads, add tapioca or potato starch from the baking aisle.

Mix in (not milled)
Starches, gums and psyllium are already fine powders, so they skip the mill. Tick what you want and we stir it into your blend after milling, at the shelf price with no milling charge.
- Starch makes cakes and breads lighter. It is usually about a quarter to a third of a blend.
- Gum holds it all together, and a little goes a long way: roughly 1 teaspoon per cup of flour for bread, less for cakes and cookies. An ounce is about 9 teaspoons.
- Psyllium is the gum-free binder, mostly for bread.
- Bake lots of different things? Leave the gum out here and add it to each recipe instead.
Spices
Whole spices + flax we grind to order
Choose Ground on any of these and it arrives ground, same price as whole. Pre-ground when we have it on the shelf, otherwise ground as we pack. Flax seed is in this list on purpose: it would clog the mill, so it is always ground in the spice grinder. We fill spices by weight, so a short jar, a tall jar or your own container all work.

Good to know
A few things people ask
What does it cost?
Milling grains, rice or beans into flour adds 75c per lb. Fresh-ground spices are free. Flour means setting up, running, emptying and cleaning the stone mill for your order, which is the part that takes time. Ground spice is the same price as whole.
Is there anything already milled?
Yes. Housemade oat flour, buckwheat flour, almond flour, cassava, cornmeal and the starches live in the baking aisle when they are in stock.
How should I store fresh flour?
In a sealed jar in the fridge or freezer. Whole-grain and bean flours carry their natural oils, so cold keeps them fresh for a couple of months. Whole grains keep in the pantry for a year or more.
Shopping in the store?
Ask at the counter and we will grind it if we can, but on a busy day the mill has to wait. The sure way is to order online for pickup and tick Fresh grind, so it is ground and ready when you arrive. Bring your own container to refill in store, or borrow a jar from the Reuse Library.
