Blackstrap molasses is a thick, dark syrup made during the final boiling of sugarcane juice. At this stage, most of the sugar has been removed, leaving behind a rich, bittersweet syrup lower in sugar than most sweeteners yet naturally high in nutrients. It is especially rich in iron, calcium, magnesium, potassium, and copper, and also provides B vitamins that support nerves, muscles, and skin.
With its bold, robust flavor, blackstrap molasses is a classic choice for baking (think cookies, breads, and baked beans), sauces, toppings, and more. It can even be enjoyed simply spread with peanut butter on toast.
