These organic raw pistachio kernel halves and pieces come from a family-owned California farm that has specialized in growing and handling pistachios since 1976. The farm has been operated for four generations and processes pistachios on-site to maintain quality and tight control over handling.
Most pistachios split naturally on the tree and are sold in-shell. Pistachios that do not split are shelled and sold as kernels. Within 18 hours of harvest, the pistachios are hulled, briefly dipped in water, and then dried using warm air at 180°F for 4–5 hours to reduce moisture levels to approximately 3–4%. The nuts themselves do not necessarily reach that air temperature due to moisture wicking during drying, though there are no definitive studies confirming the internal temperature reached.
The farm grows approximately 150 acres of organic pistachios, with the hulling operation located directly on the property to allow timely processing after harvest.
These kernels have a mild, naturally sweet flavor and soft crunch, making them well suited for snacking, baking, pestos, grain dishes, and savory recipes where shell-free pistachios are preferred.
