$2.80 / oz (~$1/Tbsp)
earthy root traditionally valued for skin health, digestive comfort, unirary health, and liver wellness
USDA Organic Kosher
Origin: Cultivated in the USA (Pacific Northwest)
Burdock root has been valued for centuries in Western herbal traditions and across East Asia, where the entire plant is eaten as a nourishing vegetable known as gobo. The dried root carries a mild earthy bitterness with a subtle sweetness and is commonly prepared as a decoction or blended into herbal teas. Its firm structure softens during simmering and contributes a grounding, rooty depth to blends.
This biennial plant belongs to the Asteraceae family and grows a long taproot that can reach several feet into the soil. The cultivated root has a light brown exterior and a fibrous interior that becomes pleasantly tender when cooked. In Japanese cuisine, fresh burdock is used in stir-fries, soups, and braised dishes for its clean, crisp flavor. The dried form can be infused or simmered for a similar earthy profile.
