These mussels are grown in Totten Inlet, in South Puget Sound, using a suspended deep-water farming method. Mussels are grown hanging from floating rafts rather than resting on the seafloor, which keeps shells clean, minimizes contact with sediment, and supports consistent, grit-free mussels. This style of shellfish farming relies on natural water flow and filtration, and is widely recognized as a low-impact, regenerative form of aquaculture.
Once harvested, the mussels are cleaned and steamed, then removed from their shells and processed in small batches. Depending on the flavor, they are lightly brined or combined with thoughtfully prepared sauces, then finished through slow smoking or gentle packing to preserve texture and natural umami.
